Almost didn’t make it home with my slice of Italian rainbow cookie cheesecake. But I succeeded and it’s still in one piece.

It is absolutely ridiculously amazing! The layers of almond-paste cake separated by fruit jam and cheesecake. Yum! Usually cheesecake’s richness can overpower other flavors. Not true in this dessert. The essence of a rainbow cookie truly shines through.
