The long-awaited arrival of Cooper’s Hawk Winery & Restaurant has finally come after months of anticipation. This marks the company’s second location in Southwest Florida and its 54th nationwide, with the official opening slated for April 3, 2023. Having had the privilege of a sneak peek tour, I can confidently say that this place exceeds expectations.
Originating from Chicago, Cooper’s Hawk was founded by Tim McEnery in 2005. It prides itself on offering a modern-casual experience in an upscale setting. This translates to familiar cuisine with innovative twists, all enjoyed in an elegant atmosphere. The core belief that food and wine foster lasting connections resonates deeply with me.
Upon entering, guests are greeted by a spacious Napa Valley-style tasting bar and an artisan market filled with wine trinkets and seasonal goods, alongside an array of truffles. The contemporary-American menu showcases international flavors, with each dish accompanied by a bin number indicating the ideal wine pairing. Additionally, gluten-free options, a kids’ menu, and catering services are available.
Leading the culinary team in Fort Myers are Senior Area Director Tim Mahler and General Manager Clarissa Fleshner, ensuring unparalleled quality and presentation. Notably, Emily Wines, a Master Sommelier—one of only 219 worldwide and one of 21 women in the U.S.—collaborates with Cooper’s Hawk, curating her line of vinos under the label Camille. During our tasting, Ms. Wines expertly guided us through each wine selection and its complementing dish, emphasizing Cooper’s Hawk’s unique approach of creating dishes to match its wines.
Chef CJ LeFevre, the executive kitchen manager, personally oversees training at new locations, instilling a commitment to quality. Signature dishes such as Pan-Roasted Mahi Mahi, Red Wine Braised Short Ribs, Ricotta Gnocchi Carbonara, and Drunken Shrimp showcase the culinary expertise.
The attentive staff ensures each guest feels valued, going the extra mile to create memorable experiences. Cooper’s Hawk exclusively offers its wines, cultivating relationships with top vineyards worldwide to source the finest grapes.
Boasting over 600,000 Wine Club members, Cooper’s Hawk offers exclusive benefits, including discounts and members-only events. For non-wine enthusiasts, a full bar with an excellent selection of alternatives, including sangria and cocktails, awaits.
The gift shop features an array of accessories catering to wine lovers, from Viking head-styled pourers to glassware and decanters. Patio seating is available for those who prefer outdoor dining, completing the immersive experience.
In essence, Cooper’s Hawk isn’t merely a restaurant; it’s an educational tasting journey, inviting guests to indulge in exceptional cuisine and wines.
